Biographical/Historical Note
Dr. Howard Appledorf (1941-1983) served as a member of the faculty in the Department of Food Science and Human Nutrition at the University of Florida from 1960 until his death in 1983. A graduate of the Massachusetts Institute of Technology with a Ph.D. in Nutrition, he came to UF following post-doctoral work at the University of California, Berkeley. He had several professional affiliations, including the Institute of Food Technologists and the Society for Nutrition Education. Appledorf was the recipient of three teaching awards at UF, including Teacher of the Year in 1974, and in 1978 was designated a UF Distinguished Lecturer. As national spokesman for the Institute of Food Technologists, he argued that "fast foods" are of high nutritional value.
Scope and Content
The collection contains correspondence to and from professional organizations, fast-food franchises, and fellow faculty members. Also included are his numerous publications aimed at both the members of his profession and the general public, lecture notes for his undergraduate level course entitled "Man's Foods" along with research notes for and descriptions of the many departmental nutrition projects he oversaw as professor.
